oatmeal banana bake

I have not baked in a long while, and I am craving something homemade. 
However I do not have a wide variety of ingredients, so I 
mixed together whatever I had. 
The result is surprisingly better than I had imagined! 

Oatmeal Banana Bake
3 cups oats
2 bananas
1/4 cup peanut butter
1/4 cup yogurt
1 tablespoon oil
salt to taste

Mix together and spread in a baking dish. You could spoon them out into 
cookies if you wanted to. 
Bake at 350 for about 15 minutes (less for cookies). 
The middle of mine stayed a bit gooey, but I liked it that way. 
Best when warm, straight out of the oven :]

persimmon muffins

We had extra persimmons so we also made some tasty muffins. These were delicious and moist!

Persimmon Muffins
1 cup of flour (I used oat, buckwheat, and kamut)
1 cup persimmon pulp
1/4 cup honey
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 cup chopped nuts (I like walnuts)
1/2 cup raisins (or cranberries)

Mix everything together and scoop into a muffin pan. 
Bake at 350 for about 20 minutes. 
Let cool and eat!

persimmon cookies


I was really craving some healthier desserts after all of the Christmas baking. We got a whole bunch of persimmons and my grandma has some great recipes for them. I substituted some healthy flours and I love the flavor that came out of it! 

Persimmon Cookies
1/2 cup butter
1/2 cup brown sugar
1 cup persimmon pulp*
1 egg
1 teaspoon vanilla
Mix then add
11/4 cup oats *
1 cup buckwheat *
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped walnuts

Bake at 350 for about 8-10 minutes and enjoy!
*grind it up in a blender or food processor
I left about 1/2 cup of oats whole
you may need to add some water with the persimmons
